As most bourbon aficionados know, a portion of the liquid in the barrel is lost due to evaporation. After aging, the bourbon is dumped out of the barrel, leaving a fair amount left trapped within the wood. They call this the “devil’s cut.”

To create Jim Beam® Devil’s Cut™ ($24), they developed a proprietary process that pulls the whiskey trapped inside the barrels’ wood after they’ve emptied it. They hold the barrels’ extract until it develops the proper balance of bourbon notes, then blend it with 6 year old bourbon and bottle it at 9o proof. This produces a premium, deep colored bourbon with full aroma and lots of character.
